Vineyard:
Murdoch Hill stands 512m high in the cool climate Adelaide Hills near the township of Oakbank, with the vineyard situated below in an undulating valley

  • Vine Positioning: The Sauvignon Blanc ranges from South, East and Northern aspect, giving a range of soils and sunlight exposure to aid in a complexit yof flavour profiles.
  • Soil Structure: Predominately sandy loam over medium clay subsoils, with varying levels of ironstone, quartz and schist rock.
  • Canopy Management: Cane pruned with vertical shoot positioning (VSP), shoot thinning, canopy trimming and bunch thinning when required.
Winemaking:
After selective hand picking whole bunches are crushed and chilled before gentle pressing. The juice is cold settled and racked before a cool and slow fermentation using selective yeast in stainless steel tanks. This method seeks to express all the fine attributes of Sauvignon Blanc.
Style & Tasting Notes:
It is a clear and pristine wine with bright acidity carrying all the attributes of the Hills style. Zesty stone fruits and gooseberry carrying through the palate to a clean, crisp mineral finish.
