- Vintage:
- The warm conditions experienced in 2008 has allowed our Cabernet to gain full ripeness. This produced fruit with full rich flavours and softer tannins than usual. Due to the heat during vintage it was critical to have selective picking of the fruit.
- Winemaking:
- Whole bunches were harvested, crushed and fermented on skins in stainless steel fermenters with regular pumping over to fully extract colour, flavour and tannins. The wines were then pressed and matured in a combination of new and older French oak barrels for 18 months before bottling.

- Style & Tasting Notes:
- Hailing from the warmer site of the Murdoch Hill vineyard, the 2008 Cabernet Sauvignon shows elegant varietal fruit characteristics of blackberry, cherries and violet fruits with distinctive mint characters of the Adelaide Hills. The generous fruit depth is supported with a well-integrated oak influence of vanilla, spice and a toasty background, developed by 14 months in the finest French oak. This has resulted in a well-balanced and structured wine with considerable length of flavour supported with firm, persistent tannins. This wine is bottled under screwcap to maintain
consistency in each bottle.
