Vineyard:
The Murdoch Hill Vineyard stands 512m high in the cool climate Adelaide Hills near the township of Oakbank.
  • Vine Positioning: A predominately north facing slope, maximizes sunlight and facilitates ripening.
  • Soil Structure: Sandy loam over medium clay subsoils.
  • Canopy Management: Vertical Shoot Positioning (VSP), canopy trimming and spur pruning.
Vintage:
The 2003 vintage was a year of unusually warm temperatures in the Adelaide Hills. The long, warm and mostly dry ripening season resulted in low yielding vines and helped to lend a rich ripeness and concentration of flavour to the Cabernet Sauvignon.
Winemaking:
Whole bunches were harvested, crushed and fermented on skins in stainless steel fermenters with repeated pumping over to fully extract colour, flavour and tannins. The wines were then pressed and matured in a combination of new and older French oak barrels for 20 months before bottling.
  • pH: 3.55
  • TA g/L: 6.78
  • VA: 0.61
Style & Tasting Notes:
Hailing from the warmer site of the Murdoch Hill vineyard, the 2003 Cabernet Sauvignon shows excellent upfront varietal fruit characteristics of blackberry, cherries and mulberries with distinctive spice and licorice characters. The generous fruit depth is supported with more moderate oak influences of vanilla, spice and a slightly savoury background. The elegant finish offers considerable length with firm, round tannins that have been softened by a dash of Merlot.
